Pizza con Caputo veloce in 6 ore

Provato a fare una pizza "al volo" con 6 ore di tempo.
Impastato:

  • 700g farina Vesuvio
  • 460g acqua (65%)
  • 18g sale
  • 4,5g lievito

Impasto diretto e 3 giri di pieghe, il tutto 6 ore prima di andare in forno. Dopo ultima piega, direttamente stagliato dopo 15 Min, senza puntata, appretto dunque di circa 5 ore.
Non pensavo venisse bene, ma molto soddisfatto.

Cotta in Ooni Koda 16, con biscotto Fiesoli a 400° in circa 1'20".
