魚香茄子 Eggplant with Garlic Sauce
1. Cut eggplant into 3 inches length and brush with oil
2. Cook eggplant in air-fryer at 400˚F for 8 minutes, take it out and set on a plate
3. Marinate 6 oz of ground meat (pork or chicken) with 1 Tbsp of soy sauce, 1 Tbsp of cornstarch and 1 Tbsp of oil for few hours
4. Cut half red bell pepper and 1 jalapeño pepper, set aside
5. Medium heat cooking pan with 2 Tbsp of oil and 2 Tbsp of minced garlic
6. Add ground meat cook for 3 minutes
7. Add both red pepper and jalapeño pepper with 1 Tbsp of soy sauce, 1.5 Tbsp of sugar, 1 Tbsp of rice vinegar and 1 tsp of white pepper powder stir fry for a minute
8. Add half cup of chicken broth cook for another minute
9. Add cornstarch mix with water to thicken the sauce
10. Add 1 tsp of sesame oil
11. Put the meat and pepper on top of the egg plant. Ready to serve
