Cured Olives

I purchased a bag of green olives and decided to cure them.

With a knife, I made some cuts on the olive's body, so that the curing solution can penetrate deep.

All olives have now the cut!

I then put the olives in a solution of water and salt.

After a few days, I changed the solution with a fresh one. This is how the olives look like after a few days. The original green colour changes slightly to brown. This is normal.

The curing solution is made with water and salt. The solution is prepared on the stove and must then be left to cool before using it with olives.
