🌱 Vegan Beetroot & Red Onion Tarte Tatin 🥧this is an amazing festive centrepiece you’ll love this Christmas.
Here’s how to make it:
Ingredients
For the topping:
- 2 medium beetroots
- 1 medium red onions
- 2 tbsp olive oil
- 2 tbsp maple syrup
- 2 tsp balsamic vinegar
- Fresh thyme leaves, for garnish
- Salt and black pepper to taste
For the puff pastry:
- 250g plain flour
- 1/2 tsp salt
- 200g vegan butter, chilled and diced
- 120ml ice-cold water
-Mix flour and salt, rub in chilled vegan butter until crumbly, and gradually add water to form a dough.
-Roll the dough into a rectangle on a floured surface.
-Fold the top third down to the centre and the bottom third up, like folding a letter.
-Rotate 90°, roll out again, and repeat the folding process 4–6 times. Chill the dough for at least 30 minutes between folds.
-Wrap the pastry in cling film and refrigerate for at least 1 hour (or overnight).
-Slice beetroot and onion with the Kenwood MultiPro Go, then bake in the oven with olive oil, maple syrup, balsamic vinegar, and seasoning for about 30 minutes at 200c
-Roll out the chilled pastry, cover the skillet, and tuck in edges. Bake at for 25–30 minutes until golden.
Cool, flip onto a plate, and garnish with thyme, sun-dried tomatoes, and vegan Stracciatella.
Serve warm or at room temperature for a guaranteed crowd-pleaser! 🌟
