๐Ÿ‹ LEMON CURD ๐Ÿ‹

Ingredients:
- 3 lemons
- 2 eggs
- 2 egg yolks
- 200g sugar
- 100g butter
- 30g cornstarch

Preparation:
In a saucepan, melt the butter and grate the lemon zest. Add the sugar and let it dissolve gently in a double boiler. Meanwhile, squeeze the lemons and strain the juice to remove pulp and seeds. Add the cornstarch and mix well.

Once the butter has melted, add the eggs and egg yolks, then incorporate the lemon juice with the cornstarch. Continue cooking, stirring constantly and gently. To check if the curd is ready, dip a spoon into the mixture, then run your finger along the back. If the two sides stay separated, it's done. Strain the mixture through a fine mesh sieve and let it cool before enjoying.

INGREDIENTI
3 limoni
2 uova
2 tuorli
200 g g di zucchero
100 g di burro
30 g di amido di mais

PREPARAZIONE
In un pentolino versa il burro e grattugia la scorza di limone, aggiungi lo zucchero e lascia sciogliere dolcemente a bagnomaria. Intanto spremi il succo dai limoni e filtra per eliminare filamenti e semi. Aggiungi l'amido di mais e mescola bene.
Ora che il burro si รจ sciolto unisci uova e tuorli e poi il succo di limone con l'amido. Continua la cottura mescolando di continuo e dolcemente. Per assicurarti che la salsa รจ pronta basta fare in questo modo: immergi un cucchiaio, scorri il dito sul dorso, se le due metร  restano ben separate allora รจ arrivata a cottura. Filtra il tutto in un colino a maglie strette e fai raffreddare prima di gustare.
