  • 4 Eggs
  • 70 g of Brown Sugar
  • 50 g of Cornstarch
  • 300 g of Greek Yogurt

๐Ÿ‘จโ€๐Ÿณ PREPARATION:

  1. In a large bowl, mix the yolks with the sugar and yogurt using a hand whisk until you achieve a smooth and creamy mixture.
  2. Add sifted cornstarch and mix carefully until all ingredients are fully incorporated.
  3. In a separate bowl, beat the egg whites until stiff peaks form and fold them into the previously prepared mixture, mixing gently from the bottom up to avoid deflating the egg whites and keeping the batter light.
  4. Pour the batter into an 18 cm diameter cake pan, previously lined with parchment paper, and place it inside a larger cake pan.
  5. Using a toothpick, create a spiral in the batter and gently tap the cake on the table to remove any air bubbles.
  6. Preheat the oven to 150ยฐC and bake the cake for 30 minutes. Then, reduce the temperature to 140ยฐC and bake for another 30 minutes.
  7. Once the baking time is over, turn off the oven and let the cake stay inside for another 15 minutes without opening the door to allow it to cool gradually.

STORAGE:
To maintain its softness, store the Yogurt Cloud Cake for up to four days under a glass dome or wrapped in cling film.

TIPS:

  • Ensure all ingredients are at room temperature for better batter consistency.
  • Use an 18 cm diameter cake pan and line it well with parchment paper on the base and sides.
  • The water in the outer pan should be boiling to ensure even cooking and a soft texture of the cake.
  • Bake the cake in the middle part of the oven for even cooking.

๐Ÿ‘ฉโ€๐Ÿณ INGREDIENTI:

  • 4 Uova
  • 70 g di Zucchero di canna
  • 50 g di Amido di mais
  • 300 g di Yogurt greco

๐Ÿ‘จโ€๐Ÿณ PREPARAZIONE:

  1. In una ciotola capiente, mescolate i tuorli con lo zucchero e lo yogurt utilizzando una frusta a mano, fino ad ottenere un composto omogeneo e cremoso.
  2. Aggiungete l'amido di mais setacciato e mescolate con cura fino a incorporare completamente gli ingredienti.
  3. A parte, montate gli albumi a neve ferma e aggiungeteli al composto precedentemente preparato, mescolando con movimenti delicati dal basso verso l'alto per non smontare gli albumi e mantenere l'impasto leggero.
  4. Versate l'impasto ottenuto in una tortiera da 18 cm di diametro, precedentemente foderata con carta forno, e posizionatela all'interno di un'altra tortiera piรน grande.
  5. Utilizzando uno stuzzicadenti, create una spirale nell'impasto e sbattete la torta delicatamente sul tavolo per eliminare eventuali bolle d'aria.
  6. Preriscaldate il forno a 150ยฐC e cuocete la torta per 30 minuti. Successivamente, abbassate la temperatura a 140ยฐC e cuocete per altri 30 minuti.
  7. Una volta trascorso il tempo di cottura, spegnete il forno e lasciate la torta all'interno per altri 15 minuti senza aprire lo sportello, in modo che si raffreddi gradualmente.

CONSERVAZIONE:
Per mantenere intatta la sua morbidezza, conservate la Torta Nuvola allo Yogurt per massimo quattro giorni sotto una campana di vetro o avvolta nella pellicola.
