Ingredients:

  • Chicken breasts: 2 pounds, cooked and shredded (about 900 grams)
  • Sour cream: 1 cup (240 mL)
  • Cream of chicken soup: 1 can (10.75 ounces or about 305 grams)
  • Rotel tomatoes (diced tomatoes with green chilies): 1 can (10 ounces or about 283 grams), drained
  • Garlic powder: 1 teaspoon (5 mL)
  • Onion powder: 1 teaspoon (5 mL)
  • Cheddar cheese: 2 cups, shredded (about 225 grams)
  • Nacho Cheese Doritos: 1 bag (about 11 ounces or 312 grams), lightly crushed
  • Green onions: 1/2 cup, chopped (for garnish)

Instructions

Preheat and prepare:

  • Preheat your oven to 350Β°F (175Β°C). Lightly grease a 9x13 inch baking dish.

Mix the filling:

  • In a large bowl, combine the shredded chicken, sour cream, cream of chicken soup, drained Rotel tomatoes, garlic powder, and onion powder. Mix well.

Layer the casserole:

  • Spread half of the crushed Doritos evenly on the bottom of the prepared baking dish.
  • Spoon the chicken mixture over the Doritos layer.
  • Top with shredded cheddar cheese.
  • Finish with the remaining Doritos.

Bake:

  • Bake in the preheated oven for 20-25 minutes, or until the casserole is bubbling and the cheese is melted and slightly golden.

Garnish and serve:

  • Garnish with chopped green onions.
  • Serve hot and enjoy the creamy, crunchy goodness!
