Ingredients
For the Cake:
1 Β½ cups granulated sugar (285g)
Β½ cup vegetable oil (118 ml)
3 large eggs
1 tablespoon pure vanilla extract (15 ml)
3/4 cup sour cream (177 ml)
2 cups all-purpose flour (280g)
Β½ cup cocoa powder (55 g)
1 tablespoon espresso powder (5g) (optional)
1 Β½ teaspoons baking powder (5 g)
1 teaspoon baking soda (4 g)
1 teaspoon salt (5 g)
1 ΒΌ cup Chocolate Stout or Guinness (355 ml)
For the Frosting:
2 cups (4 sticks) unsalted butter, softened
1 cup Hersheyβs Special dark chocolate cocoa powder, sifted
7β8 cups powdered sugar
2 teaspoons vanilla extract
1 tablespoon heavy whipping cream
2 tablespoons chocolate stout
Pinch of salt
Instructions
For the Cake:
Preheat and Prepare Pans: Preheat the oven to 350Β°F. Grease and line 3 8-inch round baking pans.
Mix Wet Ingredients: In a large mixing bowl, combine sugar, oil, eggs, and vanilla extract. Beat until light and creamy. Mix in sour cream until well combined.
Combine Dry Ingredients: Sift together flour, cocoa powder, espresso powder, baking powder, baking soda, and salt. Add to the batter alternately with the chocolate stout, mixing until smooth.
Bake: Divide batter evenly among the pans and bake for 20-24 minutes. Allow to cool completely before frosting.
For the Frosting:
Beat Butter: Beat butter until light and creamy. Gradually beat in cocoa powder.
Add Sugar and Liquids: Alternate adding powdered sugar and liquid ingredients, beating until smooth and fluffy.
Whip: Whip frosting for 3-4 minutes until light and airy. Adjust consistency with heavy cream if needed.
Assembly:
Layer Cakes: Level cake layers and place one on a cake board. Pipe a layer of frosting onto the cake, then add the second layer and repeat. Place the final layer on top.
Crumb Coat: Apply a crumb coat of frosting and refrigerate to set.
Final Frosting: Frost the cake with the remaining frosting, smoothing the sides and top
Decorate: Pipe decorative borders on top using a large piping bag.
