Peaches and Cream Layer Cake

Ingredients:
For the Cake:
2 1/2 cups all-purpose flour
2 1/2 tsp baking powder
1/2 tsp salt
3/4 cup unsalted butter, softened
1 1/2 cups granulated sugar
4 large eggs, at room temperature
1 tsp vanilla extract
1 cup whole milk, at room temperature
For the Peaches:
3 large ripe peaches, peeled and thinly sliced
2 tbsp granulated sugar
1/2 tsp ground cinnamon
For the Cream Cheese Frosting:
1/2 cup unsalted butter, softened
8 oz cream cheese, softened
4 cups powdered sugar, sifted
1 tsp vanilla extract
For Garnish:
Fresh peach slices
Mint leaves
Directions:
Prepare the Cake:
Preheat the oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
Divide the batter evenly among the prepared cake pans and smooth the tops with a spatula.
Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cakes to cool in the pans for 10 minutes, then transfer them to wire racks to cool completely.
Prepare the Peaches:
In a bowl, toss the sliced peaches with the granulated sugar and ground cinnamon until well coated. Set aside.
Prepare the Cream Cheese Frosting:
In a large mixing bowl, beat together the softened butter and cream cheese until smooth and creamy.
Gradually add the powdered sugar, one cup at a time, mixing well after each addition.
Stir in the vanilla extract until well combined.
Assemble the Cake:
Place one cake layer on a serving plate or cake stand. Spread a layer of cream cheese frosting over the top.
Arrange a layer of sliced peaches over the frosting.
Repeat with the remaining cake layers, frosting, and peaches, ending with a layer of frosting on top.
Garnish:
Garnish the top of the cake with fresh peach slices and mint leaves, if desired.
