Samoa Cheesecake

Ingredients:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted unsalted butter
- 2 cups cream cheese, softened
- 1/2 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup shredded coconut, toasted
- 1 cup caramel sauce
- 1/2 cup semisweet chocolate chips, melted
Directions:
- Preheat your oven to 325Β°F (163Β°C).
- Mix graham cracker crumbs with melted butter and press into the bottom of a springform pan to form the crust.
- In a bowl, beat the cream cheese with sugar until smooth. Add eggs one at a time, followed by vanilla extract, mixing well after each addition.
- Pour the cream cheese mixture over the crust in the pan.
- Bake for 45 minutes, or until set. Allow to cool.
- Once cooled, spread caramel sauce over the cheesecake, then sprinkle toasted coconut on top.
- Drizzle melted chocolate over the coconut and refrigerate for at least 4 hours before serving.
