Ingredients:
Crust:

  • 1 cup digestive biscuit crumbs
  • 1/2 cup roasted pistachios, finely ground
  • 1/4 cup unsalted butter, melted

Pistachio Layer:

  • 1 cup pistachio paste
  • 1/2 cup confectioners' sugar
  • 2 cups heavy cream, chilled
  • 1/2 teaspoon almond extract

Topping:

  • 1/2 cup chopped pistachios
  • Whole pistachios for garnish

Directions:

  • Combine digestive biscuit crumbs, ground pistachios, and melted butter. Press into the bottom of a springform pan to form the crust. Chill in the refrigerator.
  • For the pistachio layer, mix pistachio paste and confectioners' sugar in a bowl. In a separate bowl, whip the heavy cream to stiff peaks, then fold into the pistachio mixture with almond extract.
  • Spread the pistachio mousse evenly over the crust and refrigerate until set, about 4 hours.
  • Once set, sprinkle chopped pistachios over the top and garnish with whole pistachios before serving.
