Ingredients:
Crust:
- 1 cup digestive biscuit crumbs
- 1/2 cup roasted pistachios, finely ground
- 1/4 cup unsalted butter, melted
Pistachio Layer:
- 1 cup pistachio paste
- 1/2 cup confectioners' sugar
- 2 cups heavy cream, chilled
- 1/2 teaspoon almond extract
Topping:
- 1/2 cup chopped pistachios
- Whole pistachios for garnish
Directions:
- Combine digestive biscuit crumbs, ground pistachios, and melted butter. Press into the bottom of a springform pan to form the crust. Chill in the refrigerator.
- For the pistachio layer, mix pistachio paste and confectioners' sugar in a bowl. In a separate bowl, whip the heavy cream to stiff peaks, then fold into the pistachio mixture with almond extract.
- Spread the pistachio mousse evenly over the crust and refrigerate until set, about 4 hours.
- Once set, sprinkle chopped pistachios over the top and garnish with whole pistachios before serving.
