Ingredients:

  • Cold large eggs (8 units)
  • Coarsely chopped dark or semisweet chocolate (1 pound)
  • Salted butter cut into pieces (2 sticks)
  • Optional for topping: powdered sugar and berries

Directions:

  • Prepare your springform pan with parchment and foil for a water bath, and heat your oven to a moderate temperature.
  • Whip eggs to a volume twice their original size using a mixer.
  • Gently melt your butter and chocolate together until smooth.
  • Fold the eggs into the chocolate in stages until just combined.
  • Bake in the water bath until the edges pull away, then cool, chill, and serve adorned if you like.
