Ingredients:
For the Chia Pudding:
- 1/2 cup chia seeds
- 2 cups almond milk
- 1 tablespoon maple syrup
- 1 teaspoon vanilla extract
- For the Strawberry Compote:
- 2 cups fresh strawberries, hulled and diced
- 1/4 cup granulated sugar
- Juice of 1/2 lemon
For the Yogurt Layer:
- 2 cups Greek yogurt
- 2 tablespoons honey
For the Topping:
- Fresh strawberries, sliced
- Granola
- White chocolate pearls (optional)
- Fresh mint leaves (for garnish)
Directions:
- In a bowl, combine chia seeds with almond milk, maple syrup, and vanilla extract. Stir well and let sit for at least 30 minutes or until it has a pudding-like consistency.
- For the compote, combine strawberries, sugar, and lemon juice in a saucepan over medium heat. Cook until the strawberries soften and the sauce thickens, about 10 minutes. Allow to cool.
- Layer half of the chia pudding into glasses, followed by a layer of strawberry compote.
- Add a layer of Greek yogurt mixed with honey.
- Top with the remaining strawberry compote.
- Garnish with fresh strawberry slices, a sprinkle of granola, white chocolate pearls, and fresh mint leaves.
