Subject: Timing of transferring to secondary for lagers/pilsners

Hey Everybody,
I'm brewing my first pilsener and I forgot to check O.G., My
predicted gravities were 1.045 OG/1.009 FG, according to BeerTools.
When do I transfer to a secondary? Do I do a diacetyl rest with
WY2007 (Pilsen lager)? Fermenting 2 days now at ~54F..

Subject: "Grainy" flavor with a Wit

Hello HBD'ers
Recently I was enjoying a certain mass-produced, cloudy, wit-bier
style beer from a very well known Rocky mountain area brewer...
What do you suppose might have given it a "grainy" flavor which I
rather enjoy, and I think is missing from my own home-brewed attempts
at the style? Torrified wheat? Unmalted Barley? White wheat? I've
used wheat DME and a 4lb mini mash of Pilsner/Wheat/Oats/Torrified
wheat (+ Coriander/Bitter and sweet orange or course) in the past.
Just looking for suggestions!

Subject: Ancient History Revealed!

Greetings, Beerlings! Take me to your lager...

Well, I've spent some time decoding the fabled Missing Archives of The
Ancient Janitor. The first Digests ever published, and their "brewsletter"
predecessors have been added to the archive. I have not yet "HTMLized"
them for those who ply the pages of the Digest on the website, but, as
soon I resolve some numbering issues between the new and old Digests,
this, too, will be done - from reviewing these lost scrolls, it is
apparent that the current Digest numbering system misses the mark by over
500 issues!

Special thanks to Rob Gardner for dropping these on us. Be sure to peruse
the ftp archives where you will find new 1986 and 1987 directories. I have
not yet reconciled the 1988 and 1989 files Rob included against what we
already have in the archive, but will do so at the next opportunity.

ALSO: if someone has some space to house a mirror of the archives, it is
time to come forward! The Stanford archives have been gone for many years
now, and I don't think Spencer's archive is currently active since his
Digest search was firewalled also many years ago. I would greatly
appreciate space on a server we know to be enduring for this purpose - such
as ibiblio or the like. In any case, please let me know who and where you
are. If it is possible to provide me telnet access to the space as well, I
can keep the archives free of SPAM, as I do the archives housed on the HBD
server (this usually requires me to edit the spam out of the archived
file...), or, if you can actively mirror the site using diff on the files
or something of the sort... In any case, please let me know! After all
this time, it'd truly be a shame if The Digest were to be lost to history.
