One of the great things about the HBD is that it seems to attract a lot of
expertise in areas other than pure brewing knowledge. I am hopeful that
somewhere out there is a person with a deep knowledge of the world of hot
water heater elements.

My electric kettle (built in Saskatoon Canada by someone who at last contact
seemed to want to distance himself from ever having sold these commercially
for fear of lawsuits)is fitted with a couple of 3000W low watt density
elements which appear to be Giant 10G30 80 units, at least that is what is
on the back cover plate. After my latest brew session, I seem to have
scrubbed my way from a nice shiny copper surface to a dull silver one. In
other words, my latest cleaning with a hot PBW solution and a soft scrubbie
has taken away much of the copper sheathing and mostly exposed the metal
underneath. I had no idea my cleaning regimen would do this to copper, but
what's done is done, and I am now left with a dull silvery element of
unknown makeup.

Can anyone tell me what this is, and whether it is safe to continue using
for boiling my wort?

probably would explain it to some degree.

I doubt that the atmospheric change has much to do with the beer's
foam. Most cabins are pressurized to the equivalent of 8000 ft
altitude, or 10.91 psia (compared with 14.696 at sea-level). The
respective partial pressures of carbon dioxide at sea-level and 8,000
ft, which determine CO2 escape rates, are 0.56 and 0.42 psia. The
difference should be pretty negligible compared with the ~26 psia (~11
psig) of CO2 in a cold Bud. If anything, the foam would dissipate
slightly faster at cabin pressure because of the increased pressure
gradient between the beer and the air. It's the opposite of
nitrogenating a draft beer.

The American Society of Brewing Chemists' journals are stuffed with
research on foam stability, which never fails to glaze my eyes. I'm
pretty sure the big guys use synthetic chemicals, which doesn't do
much to stop the widespread practice of pouring their beers with as
little head as possible.

How about a Winterfest that's actually held in a winter month?

Las Vegas Winterfest 2008 is just weeks away, on 9 February 2008. We're
looking to grow the competition back to what it used to be, and we need your
entries!

Two bottles and $7.00 is all it takes to get your beer, mead, or cider in.
Shipped entries are accepted 21 January to 1 February...in other words, Right
Now. :-) If you're coming from out of town to judge or steward, you can save a
few bucks and bring your entries with you.

This year's competition will be held at the Freakin' Frog, on Maryland
Parkway across from UNLV. We'll need all of the judges and stewards we can
muster; if you're interested, send me some mail. It's not too late!

The Great British Beer Festival runs from 5th to 9th August 2008

and well worth the short trip over the Atlantic.

The London Amateur Brewers meet on 4th August, and any homebrewers over for
