Dear Ms. (Mr.?) Dawson,

You indicated that the trees for your Red Delicious were planted by your
great grandmother. Initially, I thought this meant that your trees were
planted in the 1850s and 1860s, but Red Delicious did not exist then. A
predecessor of it, the Hawkeye, also seems to have first appeared around
1880 in Iowa. So you mean that your great grandmother planted your two
trees in the 1950s and 1960s?

I've read that there are 300 or more strains of Red Delicious today. So
I'd be interested to learn if you and Mr. Erwin, after exchanging some of
your Red Delicious apples, thought there are any noticeable differences
between them.

Subject: Aging in bulk

My question is what are the advantages or disadvantages to aging cider in bulk.
My husband and I mostly make 5 gallon batches. We rack when the gravity is
under 1.006 into our secondary. The cider clears totally in 1-3 months.
There is very little sediment at that time. I like to bottle as soon as
the cider clears in hopes of a bit of bottle conditioning but my husband
thinks it is best to have the cider sit in bulk for several more months.
Anyone have an opinion on this?
