So here we are, issue #2000 of the Cider Digest, which means that close to
2000 issues of the digest have now appeared.[1]

The subscriber list is just over 1400 entries long, so we might have over
1300 subscribers.[2]

The Cider Digest was started on August 14, 1991, so it's a bit over 24
years old.

Why the uncertainties?
[1]This is indeed issue 2000, but there are a couple of early digests
missing from any archive I know about. So...did those missing issues
actually come out and get lost, or did the digest counter get incremented
an extra time or two without a corresponding digest? Who knows?

[2]The subscriber list is actually 1403 entries as I write this. But it's
certain that some of those subscribers aren't real any more, because there
are mailers which don't bounce mail sent to nonexistent addresses.

Be all that as it may...it's a lotta issues of the Cider Digest, over a
lotta years, to a lotta people.

I back sweeten and keg all my ciders and have experimented with a number
of filters and fining agents. I have found Clarity-Ferm from White
Labs to be the best. I mix it together during the blending phase and it
will drop totally clear in a couple of weeks. Don't be alarmed when the
first couple of pints come out looking to mud. The draw spout on the keg
will be pulling from the trub but once you clear a little space around it
the cider will be sparkling clear.
I keep it on draft in my kegerator at 35 degrees and haven't noticed any
quality problems after a year. I use old corny pop kegs, which you used
to be able to find at the local Coke or Pepsi distributer.

I hope Charles -doesn't- "lighten up". He's trying to help educate people.
Perhaps there are more or less gracious ways to give these corrections, but
they're necessary.
Yes, it may be obvious in one case, but what happens when someone says
"sulfide" when they mean "sulfite" or v-v?

Sulfur and compounds involving it seem to be frequent sources of confusion
and mis-use of words. It's useful to get people off on the right foot
before they "learn" a mis-use. For the folks who get the words, saying
"sulfate" instead of "sulfite" is like saying "fertilizer" instead of
"antimicrobial". It's not as bad as saying "dog kennel" when you mean
"mattress"...but still...

I've had some apple brandy. I'm much better now.

I usually know what people mean when they mix up the endings. Occasionally -
they- don't. Being sloppy with the endings is a pet peeve of mine.

Now, if I can get Siri to stop 'fixing' them for me while dictating notes, I
'll be even happier.
