Hi -- For the past 5 years I've been experimenting with bottle
conditioned cider. I've concluded the best way is to ferment to dryness
and then add a little fresh cider to my blend just before bottling. I
also add a little yeast to the blend to assure fermentation in the
bottle. I've tried various yeasts with varying results. Probably the
most consistent is Champagne yeast, but the end product has moderately
heavy Champagne notes. I'd like to hear what yeast and techniques are
being used by other bottle conditioned cider makers.
