Hi,
I'm pretty new to all this (so much information). I've read a bunch
of books on the subject (Lea, Correnty, Jolicoeur). And my first
batch of cider was a success, with no major problems. I'm trying again
this year and I've followed the usual procedures, sanitizing, grinding,
pressing, sulfiting, pectinase, yeast nutrients. The apples are yard
apples, macs, granny smiths, winesaps, golden delicious. I put the
pressed juices in two 5 gallon plastic buckets with tight lids and air
locks. The day after sulfiting I added the yeast with 5 cups sugar.
Since I don't have real cider apples I was going to make a flavored cider
with raspberries. The extra sugar brought the S.G. to 1.070, and I used
Red Star Champagne yeast. That all happened 7 days ago, but nothing
is happening. No bubbling at all. Is it totally no good or should I
wait longer? I don't smell any off aromas.....what would you suggest
I do......

Re:lighten up

I am with Charles. Words have meaning and specificity. In Japan, bento is lu=
nch while benjo is the toilet. In Hawaii, the luau is the party feast and lu=
a is the toilet. Be careful what you ask for and how.

Is the Tinmouth apple perfect for cider?
Or is it a myth?

Interesting article on searching for wild varieties:
