Dave--
I went through a similar search for a press a couple of years back. There
doesn't seem to be a lot of choices in today's market. Perhaps with an
increasing interest in cider the market for backyard sized presses will
grow & more choices will appear.
Having pressed on several antique presses, I can say that should be
your first choice. They are heavy, durable, and built to be passed down
for generations. Even if you find one that needs some work ( especially
woodwork), I'd consider it.
I looked at both Happy Valley & Yakima presses, and they seemed very
similar. I went with Happy Valley. Mechanics seem fine and wood is good
quality. Unlike the old presses that were built out of single pieces of
wood for each structural member, wood for Happy Valley is laminated--so
it goes when you cut all your Old Growth. Looks good, nonetheless. My one
complaint is it is a little light and tends to want to scoot around when
the hopper is loaded and you need bear down on the crank. But it will do
3-5 bushels in an hour or two.

Hello, has any cider maker experimented with hops to improve the flavor
of cider made from the above varieties? Which hops? What might be the
risks with using hops?
