In response to Brian Herbert's request for info regarding competitions,
here is some, hopefully others can chime in with more.
The American Homebrewers Association (AHA) and Beer Judge Certification
Program (BJCP) help coordinate homebrew competitions that include cider
(and mead) categories. These are for amateurs only, not commercial
producers. The competitions occur all year long, all around the country,
and even outside of the US. The competitions are run by various homebrew
clubs registered with AHA/BJCP, and are listed on the bjcp.org website:

It is possible that BJCP will soon have a cider judge endorsement, as they
currently have for mead judges. This will give an additional layer of
credibility. BJCP judging events always strive to use the best judges
avaliable for each event, but results invariably differ from one event to
another.
Another competition is the Great Lakes International Cider and Perry
(GLINTCAP) competition. This is open to both amateur and professional
producers. This comp focuses on cider and perry, but other categories

In the last issue Brian Herbert inquired about cider competitions. I'm not
sure if you mean commercial or home-cider entries, but there
are competitions for both in various parts of the country. I'm sure you
will hear from the GlintCAP people. I can say that in the North East you
should definitely be at the Cider Days event in MA, first week of November.
It has both a home-cider-maker competition and a bring-your-own tasting
the following morning. The latter is my favorite thing in the whole world,
and it's the inspiration for something we are helping with next weekend in
NYC, the 27th. (Other cider pros will be there for comment.) It's not a
competition, but more of a discussion around what people bring to taste. So
anyone with a non-commercial cider you want to share please come down to
Jimmy's #43 in the East Village at 4pm, 6/27.

Ben Watson's note about "Fire Cider" in CD #1973 is quite relevant!
In fact I remember in CiderDays being offered some of this "Fire Cider"
which is much closer to vinegar than to ice cider, and I must say I was
rather shocked - this is certainly not the sort of thing one enjoys as a
drink!
The Quebec regulations on cider and apple-based beverares was written in
French and defined the term "Cidre de feu". However the English
translation, which can be seen from the link below, does define "Fire
Cider" as follows:
> "fire cider": cider obtained by the fermentation of juice of apples
> that has a pre-fermentation sugar content of not less than 28 °Brix
> achieved solely by heat, producing a finished product with a residual
> sugar content of not less than 80 g per litre and an actual alcoholic
> strength of more than 9% by volume but not more than 15% by volume.
