Greetings all!

I am in the planning stages of a cidery and am to the point where a visit
to a production cidery or two would be very valuable. I've spent a year
as an assistant brewer at a local brewery, and would love to compare and
contrast some of the methods and equipment used in the process.

A trip to Washington or Oregon would probably be best, but it is much more
feasible for my wife and I to travel to Colorado, a regular vacation spot
for us anyway. From the research I've done, there seems to be plenty of
local cideries to check out.

If anyone has suggestions or contacts in the area that would welcome
a fellow cider enthusiast, please feel free to email me directly at

The Formol method. I jiggered the calculation so that I do it on the same
sample as a titratable acidity. Titrate to pH 8, add a formaldehyde aliquot,
titrate back to pH 8. The second titration is really small - I switch to a
pipette that's much smaller. Formaldehyde isn't a nice substance, but I
work with decent ventilation and only do a handful a year.

In CD 1916, Keith Kintigh asked about some obscure or possibly extinct
cider varieties.

Keith quoted a note about Redstreak as "Redstreak (available as Maryland
Redstreak or Herefordshire Redstreak)". English information indicates that
Herefordshire Redstreak should be considered extinct. The renowned
Redstreak of 17th century and Lord Scudamore fame is noted in Morgan &
Richards as "In decline by late 1700's; only one tree could be found by
Woolhope Club in 1879, but many red-streaked apples were given this name"
[meaning just Redstreak].

I have two trees of what were sold to me as "Herefordshire Redstreak",
but clearly are not. To all aspects of phenotype I can tell, they are
actually Somerset Redstreak.

Regarding Taliaferro, yes some nurseries are selling trees under that name.
But Tom Burford has investigated extensively and believes that none are
actually the true Taliaferro. See Mr Burford's comments in Cider Digest
1824, just a little over a year ago (under a prologue I wrote). And on
this matter, I'd consider Tom to be the authority. As he notes, there's
no way, now, to verify or disprove any particular apple's claim to be the
true Taliaferro...only that none which has come forward seems to have any
real claim to the title.

I regard the Herefordshire Redstreak and the Taliaferro as respectively the
English and American "holy grails" of cider apples. While I think it would
be interesting to find (and verify!) either one, a more pragmatic view is
that it just doesn't matter because we've got so many other good cider
varieties.
