To increase awareness and appreciation for artisan cider, Wassail, New
York City's 70 seat cider-focused restaurant and bar on Orchard
Street, is inviting notable and exciting up-and-coming orchardists and
cidermakers to showcase their ciders with special dinners and limited
edition releases.
"Cidermaker Dinner Series" offers guests an intimate opportunity to meet
and dine with growers and makers in Wassail's private dining room,
while our chefs showcase the extraordinary pairing potential of their
ciders with a four course cider-paired menu. Upcoming dinners:
June 2 - Kevin Zielinski, E.Z. Orchards (OR)
July 7 - Steve Selin, South Hill (Finger Lakes, NY)
July 13 - Curt Sherrer, Millstone Cellars (MD)
A more informal pay-as-you-go event, "Special Release Series" gives
cider aficionados a chance to mingle with emerging cidermakers who will
be bringing limited one-off ciders available only for that night and
only at Wassail. Upcoming special releases:
May 21 - Wayside Cider (Hudson Valley, NY)
May 28 - Shacksbury (VT)

Subject: Philosophy of cider making

I am a homebrewer of cider and fruit wines but work at a brewery. I often
have conversations at work about brewing beer and making cider, meads,
and fruit wines with beer Brewers.
From what I've read here and in several books, there seems to be a disdain
for the term of brewing when applied to cider making. There also seems to
be an undercurrent that the attitude of making beer should not be applied
when making cider.
I understand many of the differences between brewing beer and making
cider but I find myself unable to verbalized it. Any of you care to take
a whack at it? Cider making is a more holistic endeavor and brewing more
industrial? Help me out here...
My apologies if this reads a little disconnected, as I am trying to write
this at work.
