In response to Mark A. Rock:
2013 was locally a great year for wild pasture apples. I ground and
pressed, on a ca. 1890 press around 70 gallons of cider, put into 5 gallon
buckets with Campden tablets, no added yeast, racked after a while, and
left them in a 1830 dirt floor cellar at about 40 degrees. By the
following summer, 2 pails were too sour, the balance were potable and we
finished the last yesterday. The differences from Colonial production
(Campden tablets/sulfur candles and plastic buckets/ wooden barrels) seem
to me insignificant.
