Different yeasts impart different and more or less flavor. Might try a
white wine or cider yeast next time. Also, all of my ciders taste better
after a year of storage

Wondering if anyone has experience with cider made from dessert apples going
"flat" tasting after 2 months or so of storage. Had a mix of Gala/Jons,
fermented @ 60 degrees with cotes de blanc yeast till dry, racked after 3
weeks, stored with no O2 space in 275 gal plastic totes @ 60 - 65 degrees.
Now seems watery/thin in flavor. Any ideas why? Or is this just dessert
apples with no tannins?

Yep Paul, it's the dessert apples, that is typical...that's why there is
such emphasis on "cider apples". The watery/thinness is simply due to lack
of flavor. Gala's are sweet, just not flavorful.
The "alcopop" producers use dessert apples and then flavor. So you can
salvage the cider by adding flavor back. But Galas (in particular) will not
provide body or meaningful flavor to a cider.
