Hi folks,
Please forgive the cross-posting to those subscribed to Cider Digest and
Cider Workshop.
This coming fall I'm looking to buy about 40 bushels of cider apples or
any apple that might contribute interesting and unusual flavors so long
as they aren't too acidic, and the more unusual the better as far as I'm
concerned! Id prefer smaller quantities and a variety of.. varieties if
that's possible. I'm willing to travel between Georgia, South Carolina,
North Carolina and Virginia. I'm happy to pick my own as well. I suppose
I'm asking a favor of anyone that grows cider apples more than anything
else as I'm obviously not going to be a lucrative client. I'm basically
just doing research in hopes of starting a commercial cider in the
Southeast.
I had a successful go at making some good cider this last year using
apples from North Georgia: Kingston Black, Baldwin and Fauxwhelp. The
kingston blacks had virtually no tannins and were MASSIVE, I'm guessing
because they we're grown in a high-intensity/tall spindle orchard in a
very warm climate. They were up in the north Georgia Mountains where it
is cooler than the piedmont region, but I'm guessing they matured too
fast and got too big to really develop any tannins. The Baldwins, which
are suited to Southern climates, did have a lot of soft tannins. I'm
curious if anyone else has some experience growing bittersweet's/sharps
in the Southern USA and what can be done to encourage tannin
development.

I am looking for any other cider enthusiasts in Mexico. I now live in
Guadalajara and would be interested to hear from cider makers in the region
- - or country - about their experience of using local apples and also
acquiring the necessary supplies to produce cider here. The Mexican market
is dominated by imported US apples and cider is fairly uncommon here. We
are limited to Strongbow or a fizzy sweet Christmas drink. As a
west-country man I am craving a pint of Thatchers and hope to replicate
something along those lines. Please get in contact if you have any
knowledge that might be useful.
