Scottlab enzymes PEC5L and HC worked wonders with my perry this year.
I dosed the juice at pressing.
The previous year, i used home brew store pectic enzyme at press which
had no effect. That perry threw heavy globs of gelatinous goo and looked
like pink milk. I ran trials of bentonite, kieselsol/chitosan, polyclar
and gelatin for fining. Gelatin worked best, yielding a clear perry.
It stripped some tannins, which in this case was desirable.
