I also have found the discussion of N in juice interesting.

I follow the low-N path, and to date have only checked YAN after primary -
before tirage (for sparkling). This year I check N by Formol titration on
my incoming bitter-x apples and perry pears.

35 for the pears
50 for the apples.

So low, I did a cross check on 2 g/L DAP. Which came out to within 10%. So
I'm thinking I've got a low N orchard, rather than faulty chem tech skills.

I've recently pressed about 7 bushels of Tolman Sweet from a local cider
orchard. I'm curious to hear from those who have experience with Tolmans...

My juice has a PH 3.4-3.6 (used PH papers) and the SG is 1.052. Flavor is
sweet and unusual. What I'm most interested to know from the experience of
others is: how juicy were the apples? I found them to be quite dry with a
pretty low yield when pressing. I also found that they dehydrate quickly.

The apples were grown in the Willamette Valley and we had a very dry summer
with virtually no rain for several months. They were harvested before the
recent heavy rains and were allowed to sweat for 2 weeks prior to pressing.
