I'd experiment with malic acid and some citric acid. Try a few tastings
with 100:0 90:10 80:20 70:30 blends and then varying additions. Once you
narrow in on something you like you can adjust each side of the
malic:citric ratios.

I have finally found an orchard in the Rochester, New York area that will
do a custom press.
I'm planning on getting 20 gallons and have the following varietals
available to choose from.

My thought is 50% Northern Spy as a base and then 2 or 3 others added in.
I'm leaning toward Granny Smith's and Jonagolds.

Looking for recommendations from the group on the mix.

Cortland's

Empire

Golden delicious

Red delicious

Ida reds

Gala

Crispin

20 oz

Jonagold

Autumn crisp

Granny Smith's

Breaburn (soon)
