I bought a small lot of used cornys off the back of a truck recently
and all but one clearly presented through aroma and labeling evidence as
having come directly from the soda industry. The oddball had no labeling
and smelled rotten (literally) but after being treated like the others
(repeated rinsing, physical scrubbing with detergent and final boiling
water rinse) is just as sweet smelling as the rest. I'm tempted to put
it to use but am seeking confirmation from anyone with real knowledge on
the subject that it is safe to do so, as I have no idea what it previously
contained and I'm sure the "sniff test" isn't conclusive.

I have noticed that cider quality fruit is in extremely limited supply at
the wholesale level. I am considering raising some capital to expand my
operation as a fruit grower (not necessarily as a cider producer). Before
I begin down this road, I want to get some idea as to whether or not the
large commercial apple producers have moved into growing these varieties
or perhaps they are simply ignoring this niche. I don't know where to
get good market data on this question short of just asking them, which is
probably a really bad idea. I am trying to gauge the level of commercial
apple/pear producers' interest in growing these varieties. I don't want
to be stuck five years down the road trying to sell Kingston Black and
the Bittersharps (my band's name, you can't take it!) at whole sale for
a penny more per pound than Con-Agra is offering them. Any thoughts or
insights anyone might have on this would be helpful, especially in regards
to sourcing actual market data for new large starts of varieties specialized
for cider and perry. By large I mean HUGE.
