Hi all
I am looking at options above and beyond sterile filtration for my
ciders prior to bottling.
I have in the past had two batches that once bottled seemed fine but
after a few weeks dropped a pretty nasty sediment that can only be
described as rotten apple.
Looks yeasty but there is zero additional carbonation. I think the
sterile filtration must have failed for those two batches and I recalled
the product.
Anyway, I can't have that happen again and so I am thinking that flash
pasteurization and inline carbonization prior to bottling might be the
way to go.
Blended cider -> sterile filtration into bulk tank -> HTFP -> inline
carbonator -> bottling line
Has anyone done this? I'm not very enthusiastic about in bottle
pasteruization with a tunnel etc. Seems likea waste of a lot of energy.
