Rhyne Cyder used Arkansas Black apples in their 1997 bottling. It tasted
great as juice and then as cider. Very yummy!

I've had some requests recently, sent to my personal email, to "please post
this to the Cider Digest." It doesn't work that way!
If YOU want to post an article, YOU send it. Just send a plain-text
message with an appropriate subject line, to
cider@talisman.com
If I try to forward your article from my personal email, I then have to
put on my admin hat over here, repair the Subject line, and fiddle all
of the email headers to make it look like it came from you. There's
also the chance that I'll space out moving the mail over.
This is probably also a good time to remind y'all that I am NOT an editor
or moderator. I just publish the digest and handle mechanics.

I am just a beginner and learning all my lessons the hard way, but have the
encouraging help from a neighbor of mine. Been fermenting organic apple juice
from my local grocery store. Have two 3 gal carboys, been using montrachet
yeast, and adding syruped sugar in the raw for yeast food. Want a sweetness
to it and was wondering what a good measurement of maltodextrin would be
a good balance for that volume? I have tried 1 cup with limited success.

Andrew Lea, who has been a vast help and an inspiration to cidermakers,
has been awarded the Campaign for Real Ale (CAMRA) 2012 Pomona Award for
his "wealth of knowledge, technical support and passion in contributing to
the science and understanding of cider and perry production."
Most of you know of Dr Lea's many contributions, both here and on the Cider
Workshop. Andrew has been so particularly helpful to all of us because of
the combination of his willingness to help, his knowledge, and his care to
be sure he has all the details right. And let's not forget his patience to
keep explaining until WE get it right!
Andrew has been contributing to the Cider Digest for 16 years. The Digest
wouldn't be anything like what it is today without Andrew's help and many
contributions. Beyond his direct work, there's the knock-on effect of
encouraging the rest of us to be helpful and make good contributions based
on sound facts or experience.

The award is well-deserved; as one person on the workshop put it, it should
have been a -lifetime- Pomona Award.
