Thanks for all the advice:
Summary,
Charles, thanks,
Doing bench trials, pectin enzyme did a nice job but failed to form a heavy
enough settle lees ( tank sluge) so racking losses seemed unacceptably high.
Doing 2nd round bench trial with Hot Mix Sparkolloid , cider settled out
nicely forming a denser settle lees allowing for easier racking and
separation.
Haven't done the kieselsol but it looks like mission accomplished
Also, the people at Scott Laboratories were very helpful (Cidercon
exhibitors).
And Bill, you're exactly right, a little haze, good depth of color and most
importantly good taste is in the end all that counts, the rest is how you
sell it.
