I was looking on Craigslist for a job (day job), and out of curisoity I
did a search for wine just to see if something popped near me. I found a
cidermaking job that pays $70k in the northeast (US?)! Just passing it
on. Hopefully this link will still be good when the next cider digest
comes out, as they didn't give good contact info.

Feeling pretty humble here, but I'm not sure I've ever understood the
'pectin issue.' We don't use pectic enzymes at all, and are maybe too
stupid to understand why others do (we tried them years ago, over and again
- -- couldn't find the benefit). Nor do we pasteurize. Nor do we fine. Just
checked that one again with our first fining trial in about ten years
(bentonite, gelatin, pvpp, kieselguhr, etc.) -- we still haven't met a
fining agent that doesn't deaden the cider. Time drops cider bright, in our
meager experience. Gentle filtration can help in a pinch.

Scott Smith's post reminded me that I haven't put up the link to the
info I got several years ago about the many cideries in the area
around Montreal and other parts of Quebec.

If you're looking for a great cider adventure a trip to Quebec in the
fall is definitely merited. Please check ahead though since I haven't
been able to update the list in a while and some info could be out of date...

Call For Ciders:

What: 5th Annual Great Lakes Cider & Perry Association

Where: Uncle John's Cider Mill - St. John's, Michigan (in the center of the
Great Lakes)

When: Saturday, September-8th 2012 (Noon til 6pm)

Why: To promote & showcase the wide range of ciders made in this region and
beyond.

How: All that is needed from you is 4 bottles(750ml) each of any style of
cider up to 3 styles.(up to 1 case) Local cideries may also bring in their
own draft stations. Please include some information about the cider and your
cidery. We will make sure all brochures, style info and swag is displayed
prominently. If you package ciders in other sizes, send more or less
accordingly.

We will provide: Linen covered tables, ice & chill bins, dump buckets,
glassware, and volunteers for pouring cider. Your cider & promo material is
all that is needed.

We also provide cidery representatives & volunteers with a meal program for
the day. Cidery representatives also will be given free on farm
accommodations. Please let us know if you are joining us and we will have a
comfy bed for your use. (Breakfast included) Please RSVP

This is the 5th year of the festival; last year we had over 500 guests join
us for the event. Patrons receive a souvenir tasting glass with their
admission. Crowd is getting 15% bigger with each festival.
