Not having attended the recent Cider Conference, was there any
direction/consensus for changing existing TTB rules? Is this a legislative
matter or a rules issue? Is there a consensus on definitions and issues
among producers? Organization and communication is a major issue since most
craft producers are small, spread out and busy.

I like the idea, even better if I had a flash pasteurization unit. I think
the main issue is to insure that all the downstream equipment is clean. One
of the reasons bath pasteurization is popular is that it insures everything
is treated to heat; product, bottle and cap. It is extra work bottles in,
bottles out.

It may be an adjustment problem, that causes the bottle to hang. I know from
experience with our equipment and it gets to be a micro adjustment to get it
just right on the pneumatic capper I have. This is may be difficult with
some capper units.

On behalf of the membership and the board of directors of the
Association and on behalf of our esteemed competition organizer and
dedicated volunteers I am pleased to announce the call for entries for
the Seventh Annual Great Lakes International Cider & Perry Competition
(GLINTCAP).

This uniquely inclusive competition is open to twenty categories of
apple and pear fermentation beverages, separated into various classes to
make evaluations more meaningful. There are separate divisions for
commercial producers (those with license to sell their products) and
noncommercial producers. Judging will take place in Grand Rapids,
Michigan, on March 31, 2012. Please note that entries must be received
by the deadline of March 23, 2011(about 2-1/2 weeks from now). If you
are shipping entries to the competition you should start making your
plans now!

In addition to our panel of returning judges we are happy to include
some well known faces from outside the region. Virginian Tom Burford,
author of Apples: A Catalog of International Varieties, co-author of
Fruit Grafters Handbook, and a well respected orchard and nursery
consultant specializing in the restoration, re-creation, and design of
historic sites, private estates, as well as commercial and backyard
orchards will be joining us for the first time. Also joining us for
the first time will be Nicole Leibon. One of the first hired full-time
as a cidermaking specialist at Farnum Hill Cider in Lebanon, New
Hampshire, Nicole has distinguished herself with her nose, palate and
imagination. Ben Watson, author of Cider: Hard and Sweet and co-author
of The Slow Food Guide to New York, will be visiting once again from his
New England home in Francestown, New Hampshire. The Cider Digest's own
Dick Dunn, principal author of the current BJCP cider and perry style
guidelines, will be coming from his home at the base of the foothills of
the Rocky Mountains in Hygiene, Colorado. Dave White, known for his Old
Time Cider blog (including the rapidly expanding North American Cider
Map Project) will be visiting from his Pacific Northwest home in the
State of Washington.

As in past years, we are happy to have entrants participate in the
judging (Saturday, March 31) and pre-competition judges' workshop
(Friday, March 30). Integration of new judges into panels is regulated
carefully in order to preserve integrity of the judging. Those who are
interested must indicate their availability as early as possible to
Competition Director Rex Halfpenny. The workshop is free to all
volunteers and judges and available. It is also available to others on
a first-come space-available basis for a nominal fee. Presenters this
year include Eleanor Leger of Eden Ice Cider Company in West Charleston,
Vermont (discussing Ice Cider, the most rapidly growing entry category
in last year's competition); Dick Dunn (English Cider, Traditional
Perry); Charles McGonegal of AEppelTreow Winery and Distillery in
Burlington, Wisconsin (Specialty Cider styles, Spirits, Pommeau) and
Gary Awdey (Common Standard cider & perry styles and common faults in
cider & perry). Judges are invited to attend every year to continue
learning and help others to learn. Due to tendency of the workshop to
fill to capacity each must let Rex Halfpenny know about intent to attend
regardless of whether or not they participated in the workshop in the
past. Judging is blind and as usual no one will be permitted to judge
his or her own entries. Those who have participated in past judging have
found it to be very interesting and worthwhile. We welcome our entrants'
participation and continued feedback in making this a competition with
expanding relevance.

category for wood aged cider) so please read the category descriptions
