I'm looking for yield information for various cider apples.
I have a 600' tall hill with approx 50 acres of well drained rocky soil.
Elevation starts at about 1200' - 1800' . My plan is to strip much of
this hill bare (15-20 acres) before planting to cider apples and want to
see if anyone has any thoughts on planting. The hill has exposure on all
four points of the compass so I can pick and choose where to plant.

Summers are hot. Winters are cold and there is plenty of water. 30GP
well with pressure tanks and a large 10,000 gallon supply tank.

Area is in USDA zone 8b/9a Right on the border.

I think many small cider producers would like to produce tax exempt cider,
but in the scheme of things Federal permitting on cider is a minor issue
when you go commercial. I believe that tax exempt cider can only be sold on
site, so no off-farm sales or marketing and I doubt if anyone can really say
precisely what the language regarding additives means.

A federal permit is a $100 annual bond and a bit of paper work. There is a
bit of give and take in the process but it all works out. Small producers
file annually and pay $.17 a gallon, this is small peanuts when you consider
your finished product may bring $35-$55 a gallon at retail. Additional
permitting is likely required at the State level and you may find it
difficult to convince State authorities that you are legal.
