German Chocolate Cupcakes ππ§

1 cup all-purpose flour
1 cup granulated sugar
1/2 cup unsweetened cocoa powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup buttermilk, room temperature
1/4 cup vegetable oil
1 large egg, room temperature
1 teaspoon vanilla extract
1/2 cup hot water
For the German Chocolate Frosting:
1 cup evaporated milk
1 cup granulated sugar
3 large egg yolks
1/2 cup unsalted butter
1 teaspoon vanilla extract
1 1/3 cups sweetened shredded coconut
1 cup chopped pecans

Preheat oven to 350Β°F (175Β°C). Line a muffin tin with cupcake liners.
In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
In another bowl, whisk together buttermilk, vegetable oil, egg, and vanilla extract until well combined.
Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
Stir in hot water until the batter is smooth.
Fill each cupcake liner about 2/3 full with batter.
Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
Allow the cupcakes to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely before frosting.
For the German Chocolate Frosting:
In a medium saucepan, combine evaporated milk, sugar, egg yolks, and butter.
Cook over medium heat, stirring constantly, until the mixture thickens, about 10-12 minutes.
Remove from heat and stir in vanilla extract, shredded coconut, and chopped pecans.
Let the frosting cool to room temperature before spreading on the cupcakes.
