6 large egg yolks
3/4 cup granulated sugar
1 cup mascarpone cheese, room temperature
1 1/2 cups heavy cream
2 cups brewed espresso or strong coffee, cooled
2 tablespoons coffee liqueur (optional)
24 to 30 ladyfinger cookies
Cocoa powder, for dusting
Chocolate shavings, for garnish

In a heatproof bowl, whisk together egg yolks and sugar until well combined and slightly thickened.
Place the bowl over a pot of simmering water, making sure the bottom of the bowl doesn't touch the water. Cook the egg mixture, whisking constantly, until it reaches 160ยฐF (71ยฐC) on a candy thermometer, about 5-7 minutes.
Remove the bowl from the heat and whisk in the mascarpone cheese until smooth. Let the mixture cool to room temperature.
In a separate bowl, beat the heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture until fully combined.
In a shallow dish, combine the brewed espresso and coffee liqueur, if using.
Quickly dip each ladyfinger into the espresso mixture, ensuring they are soaked but not soggy. Arrange a layer of soaked ladyfingers in the bottom of an 8x8-inch dish.
Spread half of the mascarpone mixture over the ladyfingers, then repeat with another layer of soaked ladyfingers and the remaining mascarpone mixture.
Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld.
Before serving, dust the top of the tiramisu with cocoa powder and garnish with chocolate shavings.
