1 ripe mango, peeled and diced
1 cup mango juice
1/4 cup sugar
1 tablespoon lemon juice
1 cup heavy cream
1/2 cup mascarpone cheese
1 teaspoon vanilla extract
1/2 cup brewed coffee, cooled
24 ladyfinger cookies
Cocoa powder, for dusting

In a small saucepan, combine the diced mango, mango juice, sugar, and lemon juice.
Bring to a simmer over medium heat, stirring occasionally, until the sugar has dissolved and the mango is softened, about 5 minutes. Remove from heat and let cool.
In a mixing bowl, whip the heavy cream until soft peaks form.
In another bowl, beat together the mascarpone cheese and vanilla extract until smooth.
Gently fold the whipped cream into the mascarpone mixture until well combined.
Dip each ladyfinger into the cooled coffee briefly, then arrange a layer of dipped cookies in the bottom of a serving dish.
Spoon half of the mango mixture over the ladyfingers, spreading it out evenly.
Top with half of the mascarpone cream mixture, spreading it out to the edges of the dish.
Repeat with another layer of dipped ladyfingers, mango mixture, and mascarpone cream.
Cover and refrigerate the tiramisu for at least 4 hours, or overnight, to allow the flavors to meld.
Before serving, dust the top of the tiramisu with cocoa powder.
