Lentis salad

Carrots and onion
Ingredients:
- 1 cup of dried brown or green lentils
- 2 cups of water or vegetable broth
- 1 medium carrot, finely diced
- 1 small onion, finely chopped
- 2 tablespoons of olive oil
- 1 tablespoon of vinegar (red wine or balsamic)
- Salt and pepper to taste
- Optional: Fresh herbs like parsley or thyme, and a squeeze of lemon juice for extra flavor
- Optional: Add some steamed rice if you like extra carbs in your meal
Instructions:
- Cook the Lentils:
- Rinse the lentils under cold water.
Traditional cooking pan
- In a medium saucepan, combine the lentils and water or vegetable broth.
- Bring to a boil, then reduce the heat and simmer uncovered for 20-30 minutes until the lentils are tender but still hold their shape.
- Drain any excess liquid and let the lentils cool.
Instant Pot
Add the lentis and extra water inside the pot.
Cook as Pressure coocking - low 10 minutes plus 10 minutes of natural release
- Sauté the Vegetables:
- While the lentils are cooking, heat 1 tablespoon of olive oil in a pan over medium heat.
- Sauté the onion and garlic until they are soft and translucent, about 3-5 minutes.
- Add the diced carrot and cook for an additional 5 minutes until the carrot is just tender.
- Let the mixture cool.
- Assemble the Salad:
- In a large bowl, combine the cooked lentils, sautéed vegetables, and diced tomato.
- Drizzle with the remaining olive oil and vinegar.
- Season with salt and pepper to taste, and add any optional fresh herbs or lemon juice.
- Pack for the Workplace:
- If preparing this salad in advance, pack it in an airtight container.
- The flavors will meld as it sits, so it can be made the night before and refrigerated.
- Before heading out, make sure the salad is well sealed to prevent any leaks.
