Caramel Apple Pecan Layer Cake ππ°

2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 cup unsalted butter, softened
1 cup granulated sugar
1/2 cup brown sugar
3 large eggs
2 teaspoons vanilla extract
1 cup unsweetened applesauce
1/2 cup chopped pecans
1/2 cup caramel sauce

Preheat oven to 350Β°F (175Β°C). Grease and flour three 8-inch round cake pans.
In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
In a large bowl, beat butter, granulated sugar, and brown sugar together until light and fluffy.
Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
Gradually add the dry ingredients to the wet ingredients, alternating with applesauce, beginning and ending with the dry ingredients. Mix until just combined.
Fold in chopped pecans until evenly distributed throughout the batter.
Divide the batter evenly among the prepared cake pans and smooth the tops with a spatula.
Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
Remove cakes from the oven and allow them to cool in the pans for 10 minutes before transferring to wire racks to cool completely.
Once the cakes are cooled, assemble the layers by placing one cake layer on a serving plate. Spread a layer of caramel sauce over the top. Repeat with the remaining cake layers and caramel sauce, finishing with a drizzle of caramel sauce on top.
Garnish with additional chopped pecans, if desired.
Slice and serve.
