No-Bake Eclair Cake in Mason Jars π°π

Ingredients:
- 1 box (about 14 ounces) graham crackers
- 2 boxes (3.4 ounces each) instant vanilla pudding mix
- 3 cups cold milk
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- 1 can (16 ounces) chocolate frosting
Directions:
- In a large mixing bowl, whisk together the instant vanilla pudding mix and cold milk until smooth and thickened, about 2 minutes. Place the bowl in the refrigerator to chill for 5 minutes.
- In another mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Gently fold the whipped cream into the chilled pudding mixture until well combined.
- Line the bottom of each mason jar with a layer of graham crackers, breaking them into smaller pieces if necessary to fit.
- Spoon a layer of the pudding mixture over the graham crackers, spreading it out evenly.
- Continue layering with graham crackers and pudding mixture until the jars are filled, finishing with a layer of pudding on top.
- Microwave the chocolate frosting in 15-second intervals until it reaches a pourable consistency.
- Pour the warm chocolate frosting over the top of each jar, allowing it to drip down the sides.
- Place the jars in the refrigerator to chill for at least 2 hours, or until the pudding mixture has set.
- Serve chilled and enjoy!
