Ingredients:
- 1 (9-inch) chocolate cookie pie crust
- 1 cup heavy cream
- 8 ounces mascarpone cheese, softened
- 1/2 cup powdered sugar
- 2 tablespoons espresso powder
- 1 teaspoon vanilla extract
- 1/4 cup unsweetened cocoa powder, for dusting
Directions:
- In a mixing bowl, beat heavy cream until stiff peaks form.
- In another bowl, whisk together mascarpone cheese, powdered sugar, espresso powder, and vanilla extract until smooth.
- Gently fold the whipped cream into the mascarpone mixture until well combined.
- Spread the mixture evenly into the chocolate cookie pie crust, smoothing the top with a spatula.
- Refrigerate the tart for at least 4 hours or overnight to set.
- Before serving, dust the top of the tart with unsweetened cocoa powder.
- Slice and serve chilled.
