_____Ingredients:_____
For the Crust:
1 1/4 cups all-purpose flour
1/2 teaspoon salt
1/2 cup unsalted butter, cold and cubed
2-4 tablespoons ice water
For the Filling:
3 cups fresh cherries, pitted and halved
1/2 cup granulated sugar
2 tablespoons cornstarch
1 tablespoon lemon juice
1/2 teaspoon almond extract
1/2 cup mini chocolate chips
For the Topping:
1 tablespoon milk
1 tablespoon granulated sugar
_____Directions:_____
In a food processor, combine the flour and salt. Add the cold cubed butter and pulse until the mixture resembles coarse crumbs.
Gradually add the ice water, 1 tablespoon at a time, pulsing until the dough comes together.
Turn the dough out onto a lightly floured surface and shape it into a disk. Wrap in plastic wrap and refrigerate for at least 30 minutes.
Preheat oven to 400Β°F (200Β°C).
In a large bowl, combine the pitted cherries, granulated sugar, cornstarch, lemon juice, and almond extract. Toss until the cherries are evenly coated.
Roll out the chilled dough on a floured surface to fit a 9-inch pie dish. Transfer the dough to the pie dish and trim any excess overhang.
Sprinkle mini chocolate chips over the bottom of the pie crust. Spoon the cherry filling over the chocolate chips.
Fold the edges of the crust over the filling, pleating as needed. Brush the crust with milk and sprinkle with granulated sugar.
Bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.
Allow the pie to cool before slicing and serving.
