For the Cupcakes:
150g (2/3 cup) caster sugar
150g (1 1/4 cups) self-raising flour
150g (2/3 cup) unsalted butter, softened
3 medium eggs
Zest of 1 orange
1 tsp vanilla extract
100g (3.5 oz) white chocolate, chopped
For the Frosting:
200g (1 1/2 cups) icing sugar
100g (3.5 oz) unsalted butter, softened
Zest of 1 orange
Juice of 1/2 orange
50g (1.75 oz) white chocolate, melted
For Decoration:
Orange zest curls
White chocolate shavings

Preheat the oven to 180Β°C (160Β°C fan/350Β°F/Gas Mark 4). Line a muffin tin with paper cases.
In a large mixing bowl, cream together the caster sugar and softened butter until pale and fluffy.
Beat in the eggs, one at a time, then add the vanilla extract and orange zest.
Sift in the self-raising flour and gently fold until just combined.
Fold in the chopped white chocolate.
Divide the batter evenly between the paper cases, filling each about two-thirds full.
Bake in the preheated oven for 18-20 minutes, or until the cupcakes are risen, golden, and a skewer inserted into the center comes out clean.
Remove from the oven and transfer the cupcakes to a wire rack to cool completely.
For the frosting, beat together the softened butter and icing sugar until smooth and creamy.
Add the orange zest and juice, and beat until well combined.
Drizzle in the melted white chocolate while continuing to beat until the frosting is light and fluffy.
Pipe or spread the frosting onto the cooled cupcakes.
Decorate with orange zest curls and white chocolate shavings before serving.
