For the Crust:
1 and 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted

For the Cheesecake Filling:
24 oz cream cheese, softened
1 cup granulated sugar
3/4 cup sour cream
1/4 cup heavy cream
4 large eggs
1 teaspoon vanilla extract
1/2 cup strawberry puree

For the Ganache:
6 oz semi-sweet chocolate, chopped
1/2 cup heavy cream

For the Topping:
Fresh strawberries, halved
Chocolate curls or shavings

Preheat the oven to 325Β°F (163Β°C). Wrap the outside of a 9-inch springform pan with aluminum foil. Grease the inside of the pan.
In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter until well mixed. Press the mixture into the bottom of the prepared pan.
In a large bowl, beat the cream cheese and sugar until smooth. Add the sour cream, heavy cream, eggs, and vanilla extract, and beat until creamy and well combined.
Pour half of the cheesecake batter over the crust.
Add the strawberry puree to the remaining cheesecake batter and mix until combined. Pour the strawberry batter over the plain cheesecake layer.
Place the springform pan inside a larger pan and fill the larger pan with hot water until it reaches halfway up the sides of the springform pan.
Bake for 1 hour and 10 minutes, or until the edges are set and the center is slightly jiggly.
Turn off the oven and leave the cheesecake inside with the door closed for 30 minutes.
Remove the cheesecake from the oven and allow it to cool completely before refrigerating for at least 4 hours or overnight.
For the ganache, place the chopped chocolate in a heatproof bowl. Heat the heavy cream until simmering, then pour it over the chocolate. Let it sit for 2-3 minutes, then whisk until smooth. Pour the ganache over the chilled cheesecake.
Garnish the cheesecake with halved fresh strawberries and chocolate curls or shavings.
