Chocolate Cherry Tiramisu π«π

For the Tiramisu:
1 cup heavy cream
1/4 cup powdered sugar
8 ounces mascarpone cheese, softened
1/2 cup cherry preserves
1/4 cup cherry liqueur (such as kirsch)
1 teaspoon vanilla extract
1/4 teaspoon almond extract
24 ladyfinger cookies
1 cup pitted cherries, halved
For the Chocolate Ganache:
1/2 cup heavy cream
4 ounces semi-sweet chocolate, chopped

In a large mixing bowl, beat the heavy cream and powdered sugar until stiff peaks form. Add the softened mascarpone cheese and beat until smooth and creamy.
In a separate bowl, combine the cherry preserves, cherry liqueur, vanilla extract, and almond extract. Stir until well mixed.
Spread a thin layer of the mascarpone mixture in the bottom of a 9x9-inch dish. Dip half of the ladyfinger cookies in the cherry mixture, soaking them briefly, and then arrange them in a single layer over the mascarpone mixture.
Spread half of the remaining mascarpone mixture over the ladyfingers, then arrange half of the halved cherries on top. Repeat the layers with the remaining ladyfingers, mascarpone mixture, and cherries.
In a small saucepan, heat the heavy cream for the chocolate ganache over medium heat until it just begins to simmer. Remove from heat and add the chopped chocolate. Let it sit for 2-3 minutes, then whisk until smooth and creamy.
Pour the chocolate ganache over the top of the tiramisu, spreading it evenly with a spatula. Cover and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld.
Before serving, garnish with additional cherries and shaved chocolate, if desired.
