4 large eggs
1/2 cup granulated sugar
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/4 cup powdered sugar, for dusting
1 cup fresh strawberries, sliced
1 cup heavy cream
1/4 cup powdered sugar
8 ounces mascarpone cheese
1/4 cup brewed coffee, cooled
2 tablespoons coffee liqueur (optional)
Cocoa powder, for dusting

Preheat oven to 350Β°F (175Β°C). Line a 10x15-inch jelly roll pan with parchment paper, leaving an overhang on the long sides. Grease the parchment paper with cooking spray.
In a large mixing bowl, beat the eggs and granulated sugar together with an electric mixer until thick and pale yellow. Beat in the vanilla extract.
In a separate bowl, sift together the flour, baking powder, and salt. Gradually fold the dry ingredients into the egg mixture until just combined.
Spread the batter evenly into the prepared jelly roll pan, smoothing the top with a spatula.
Bake for 10-12 minutes, or until the cake is lightly golden and springs back when lightly touched.
While the cake is baking, dust a clean kitchen towel with powdered sugar.
Remove the cake from the oven and immediately invert it onto the prepared towel. Carefully peel off the parchment paper.
Starting from one of the short ends, roll the cake up in the towel and let it cool completely on a wire rack.
In a mixing bowl, beat the heavy cream and powdered sugar together until stiff peaks form.
In another bowl, mix the mascarpone cheese until smooth. Gently fold in the whipped cream until well combined.
Carefully unroll the cooled cake and brush the surface with the brewed coffee mixed with coffee liqueur, if using.
Spread the mascarpone mixture evenly over the cake, leaving a small border around the edges. Arrange the sliced strawberries over the mascarpone layer.
Starting from the same short end as before, roll the cake up tightly, using the towel to help guide you.
Transfer the rolled cake to a serving platter and dust with cocoa powder.
Chill the tiramisu roll in the refrigerator for at least 1 hour before slicing and serving.
