1 cup unsalted butter, softened
2 cups granulated sugar
4 large eggs, room temperature
3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk, room temperature
1/4 cup lemon juice
Zest of 2 lemons
1 teaspoon vanilla extract

Preheat the oven to 350Β°F (175Β°C). Grease and flour three 8-inch round cake pans, tapping out any excess flour.
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
Add the eggs, one at a time, beating well after each addition.
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
Gradually add the dry ingredients to the creamed mixture, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
Stir in the lemon juice, lemon zest, and vanilla extract until evenly incorporated into the batter.
Divide the batter evenly among the prepared cake pans, spreading it out into an even layer.
Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
Remove the cakes from the oven and let them cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
