1 1/2 cups (360g) whole milk ricotta cheese
3 large eggs
1/2 cup (100g) granulated sugar
1/2 cup (120ml) heavy cream
Zest of 1 lemon
1 teaspoon vanilla extract
1/4 teaspoon salt
1 tablespoon all-purpose flour
1 unbaked pie crust (homemade or store-bought)

Preheat the oven to 350°F (175°C).
In a large mixing bowl, whisk together the ricotta cheese, eggs, and sugar until smooth.
Add the heavy cream, lemon zest, vanilla extract, salt, and flour to the bowl. Whisk until well combined and the mixture is smooth.
Pour the ricotta mixture into the unbaked pie crust, spreading it out evenly.
Place the pie in the preheated oven and bake for 45-50 minutes, or until the center is set and the top is lightly golden brown.
Remove the pie from the oven and let it cool completely on a wire rack before slicing and serving.
Serve slices of the ricotta pie chilled or at room temperature, garnished with fresh berries or a dusting of powdered sugar, if desired.
